Cuban Pork Ropa Vieja
- 9 oz. box Steak-umm® Cuban Style Seasoned Sliced Steaks
- 2 tablespoons olive oil
- 1 yellow onion, thinly sliced
- 1 bell pepper, thinly sliced
- 1 tablespoon minced garlic
- 3 tablespoons taco seasoning
- 15 oz can whole tomatoes
- ½ cup pimento green olives, halved
- Steamed white rice
- Seasoned black beans
- Cilantro to garnish
- In a large skillet, add olive oil and heat on medium-high. Add the onions and peppers and saute until softened.
- Add the minced garlic and cook for another 3 minutes.
- Add the taco seasoning and canned tomatoes. Reduce heat to low and simmer for 15-20 minutes or until the mixture has thickened.
- Meanwhile, cook Steak-umm Sweet & Zesty Cuban steaks according to directions on the box.
- Combine the steaks with the vegetable stew and serve with steamed white rice and seasoned black beans. Garnish with cilantro.
