Steakitos
- 9 oz pkg. Steakumm sliced steaks
- 2 TBSP taco seasoning
- 8 yellow corn tortillas
- Oil for frying or baking
- Shredded colby jack cheese
- Pico de gallo
- Cook Steakumm sliced steaks as directed on package. Break up into small pieces. Add taco seasoning. Set aside.
- Start with fresh corn tortillas (if not pliable enough, put them on a plate covered with a damp paper towel and microwave for 15 seconds.) On one end of the tortilla spoon out 2 tablespoons of the steak then roll up the tortilla. Use a toothpick to hold it in place if necessary.
- Cooking method options:
- To fry: Add 1 -1/2 inches of oil to a large skillet and heat on medium high. Wait for the oil to heat up. The taquitos should sizzle when they are placed in the oil. Working in batches, fry the taquitos for a few seconds on each side until they are golden brown and crispy. Place them on a paper towel lined plate.
- To bake: Preheat the oven to 425F. Arrange the taquitos on a baking sheet. Spray or brush the tops with oil. Bake for 15-20 minutes until golden brown and crispy.
- Remove any toothpicks and place taquitos on a plate. Top with cheese and pico de gallo. Serve with sour cream.
